I visited the Loire Valley and stayed at La Demeure de la Vignole just outside Saumur (https://www.demeure-vignole.com/). It’s a complex of ‘Troglodite’ caves, once home to a poor community of farmers, now home to a luxury hotel. The two sparkling wines I liked most were Bouvet-Ladubay in central Saumur and this one, towards Turquant where I stayed.
Tasting notes: Bright pale yellow. Aromatic and floral with notes of dried fruit and vanilla. Fine Bouquet, fruity. Makes a good change from Cava and Prosecco. An enticing blend – particularly if you, like me, are a fan of Chenin Blanc.

Good wine to sip in the cave/bathroom, dating from 1667!
A good wine and producer, but our family preference is for Gratien & Meyer especially their fizzy Cabernet Franc

I like Picpoul de Pinet very much, discovered it 30 years ago at Bouzigues with moules. But not heard of this combination!
